"I usually bake the squash for about an hour in a normal oven, cut it in half first as the steam coming out when you open the thing cooked whole is HOT (duh, it's steam!) it also cooks faster that way. Spaghetti sauce ... usually extra lean…"

"If I remember correctly, and I think I do, it has about the same nutritional value as zucchini, so yes, it would be fine for supper. In fact I might just pick one up when I do my groceries in a minute :)"

An alternative to pasta

Here is an awesome thing to try if you are a huge pasta lover......spaghetti squash. Seriously 1/2 the calories and 18g of carbs for a 100g serving (a 100g serving is 1 serving of fettuchini noodles which is 2oz). Halve the spaghetti squash, spoon out the seeds, and either microwave for 15 minutes or put in the oven on a baking sheet face up for 45 minutes. Another Recipe

Spaghetti Squash, Portabella Mushroom, Spinach Casserole

Ingredients

1 Spaghetti Squash (about 5-6 cups)

2 Tbs crushed garlic

2 onions, pureed

1/4 cup fresh scallions, chopped

6 fresh big portabela mushroom caps, chopped

1 bag of fresh spinach, slightly chopped

salt & pepper to taste

1 jar of Classico Sun-Dried Tomato Alfredo

5 weeks in...

My husband and I started this together. Don't get me wrong, I am so proud of the guy - he's lost 16lbs so far - even 2 since last week. Unfortunately I am stuck. I lost 12, then gained 2, then lost 1.5lbs. I feel as though I am busting my rear at the gym, following the eating pattern more so than what he is, cardio in the morning......no go... Now what? My frustrations are starting to escalate. Any suggestions?

Hi Nicole, and welcome to the forums.

From your challenge list, Iwould highly recommend Jon's M-Power audio series. Even after having listened to them over and over for years, I still take away new information every time I listen to them. Probably because in the mean time, my mind has evolved, my perception of things as well, and I get a different understanding than I did when listening previously.
