If there is one thing that still causes me problems, it has gotta be snacks! Whenever I fail on the EODD it's because I was overwhelmed by this sudden urge to snack on something, anything! So my plan must include "healthy" snacks, that I can have as backup for these situations! So "healthy" snack recipes wanted please!

Have a look at "page 2" and make the Geary's fudge recipe! Or have some whole wheat protein pancakes/ waffles in the freezer for quick toaster-thawing.

Watch out for the fudge :) it's "addictive". Stop at one, max two squares - luckily,it's tasty enough that you actually can.

Know the feeling. Especially if having an active day. Try some of the smoothies. They're easy to prepare while hitting the spot. For food snacks, perhaps try on page 72 the Breakfast Pile-up. Though good anytime.
A couple others are the Yogurt & Cereal Parfait or PB & Banana Bagel on page 74. Having gone through that feeling found if it contains some fruit, fiber, and protein it curbs my munches in a healthy way, of course watching that portion size helps too.

I was just thinking ... so many people around me serve "rocks" of sugary muesli-like cereals glued together with melted marshmallows (yuck!) but what if ...

If I were to use raw oats, partly crushed nuts, seeds, some raisins and/or cranberries (dried); and glued them together with some melted, dark chocolate? Spooning the mixture onto a baking sheet and leaving to cool in the fridge, those clumps would keep in a closed container and be fine as a small mouthful snack with an afternoon coffee. No?

I must admit, I "stole" the idea partly from the marshmallow sugar-clusters and partly from the soft puffed-rice-and-chocolate balls I used to get at friends' birthday parties when I was growing up. Must be a Norwegian thing, no one else seem to have any memories connected to these. You know them in Denmark, Tom?
No Sarah I must admit we didn't have those in my childhood! What we did have, was one of the most calorie dense and fat inducing cakes I can think of, the so called "kiksekage". You would melt like a pound of dark chocolate, add half a litre of 38% cream, 100grams of sugar, 50grams of full fat buttter and 4 egg yokes. Final ingridient is ordinary flat wheat biscuits. Then you would pour the chocolate mass into a square container, in layers with the biscuits. Final step is to put it in the fridge to cool and solidify. After a couple of hours you have this hardened mass of chocolate and biscuits, the "kiksekage", that you can cut into slices and eat with coffee or hot chocolate. Yummie, but I would find it difficult to eat just one slice these days! So much for changing lifestyle! Why did i write this? I need a snack now! :-)))
Sounds a bit like the "Delfiakake" which is 50/50 dark chocolate and coconut fat melted together, then ppured into a mould with layers of marzipan and "marie-kjeks" (which mom didn't use because we didn't like it) and decorated with jelly-beans :) only had that for Christmas though.

But Geary's fudge is so close to that ...!
Exactly, Marie Kiks was the brand! Geary's fudge is in the making!
Here in sweden it is called "radiokaka" (it looks like an old radio when you slice it). Ideally you'd make it whith finger-marie kex (they are rectangular instead of round) and a mix of coconut fat and chocolate. But the recipes varies, some use butter and eggs too.
Interesting that versions of the same cake exists in all three countries but have different names.

I'm drooling at my boyfriends candybowl right now. Cinnamon-cardamom-dark chocolate truffles, glögg-chocolate truffles, mozart balls and "knäck". I'll probably have some for dessert tomorrow on my feed-day.
Yes, watch out for those leftovers from Christmas. They have been known to attack you, when you least expect it! Funny with the "radiokaka" I can see the resemblance.

Did you know that a few years ago in Denmark, two persons actually died from eating "radiokaka"?They used salmonella infected raw eggs, which caused acute poisening and they died a few days later. This type of cake dropped somewhat in popularity after that, but its forgotten now!
Scary! So sugary-treats can kill in more than one way. ;)

I use half coconut fat and half chocolate, and egg! Had about two teaspoons worth of it, the kids "killed" the rest of it, lol.

 

Like the Radiokaka name too, the reason it's called Delfiakake in Norway is because of the coconut fat brand (Delfia fett) and the recipe being on the packaging.
