I made rhubarb pie - of sorts.
We have a plant at the side of the house that came back after last year, and I didn't want to waste it.
Rhubarb (6 stalks)
Stevia (to taste)
Whole wheat flour (about a cup)
3 eggs
1 scoop vanilla protein powder
Almond milk (enough to get the right consistency for a thick pancake batter)
Cooked up the rhubarb (diced) with Stevia until tender, poured them into a pie mold and let it cool while I made a protein pancake mixture (ww flour, eggs, vanilla protein powder and almond milk to get the right consistency) that I poured over the rhubarb. Baked in the oven for about 30 minutes at 350 Fahrenheit and served warm (not hot).
I did have a little more batter than I needed, so I made a couple of pancakes which can be kept for another feed day (they freeze well)
